No Bake Peanut Butter Oatmeal Balls

Needed something quick and easy that I had all the ingredients for on hand. Turned out pretty well. I like them at room temperature better than cold, so you might want to let them sit out after putting them in the fridge for the 30 minutes. Enjoy!


2 cups rolled old-fashioned oats                             
3/4 cup white sugar
3 tablespoons unsweetened cocoa powder
1 tablespoon water
1/2 teaspoon vanilla extract
1/2 cup butter, softened
3-4 tablespoons peanut butter (I used crunchy, but creamy is also fine)
1 cup powdered sugar

1. In a large bowl, combine the oats, sugar and cocoa. With clean hands, mix in the water, vanilla, butter and peanut butter to form a dough.

2. Wash your hands, then roll the dough into balls 1 to 2 inches in diameter. Roll the balls in powdered sugar until thickly coated.

3. Chill on a baking sheet in the fridge for at least 30 minutes before serving. Makes around 25-30 balls.
