Have you all heard of this? I made one last night when I was craving chocolate but we didn’t have any lying around that I could find. Granted, it doesn’t beat my mom’s made-from-scratch-chocolate-wacky-cake, but for something quick and chocolately it’s great!
4 T flour
4 T sugar
2 T cocoa powder
3 T milk
3 T oil
Mix together flour, sugar, and cocoa powder inside a regular or large sized coffee mug. Add the egg and stir. Add milk and oil and carefully stir until moistened evenly. Place mug in the microwave and cook on high for 3 minutes. Do not be alarmed when the cake rises over the top in the microwave. Remove from microwave and eat that cake!
Some options for the cake include adding 1/2 a tsp of peppermint extract or 1/2 tsp instant coffee granules for some additional flavoring. You can also add 1 T chocolate chips, but I found that they all sunk to the bottom and make the bottom not cook quite as well. I eat mine with some ice cream on top. This recipe makes a lot for me, so I would cut it in half using 1 egg white and non fat milk for a healthier recipe.
